A delicious warming winter dish
Puy lentils and sweet potatoes
Feeds 2 people
Roast 2 sweet potatoes and some sweet red peppers together
and serve with:
BOIL 150 grammes of Puy lentils in a shallow pot using as little water as possible, until soft
THEN: Saute one clove of crushed garlic in olive oil and then add a teaspoon of ground cumin and some fresh chopped tomatoes - cook for a minute or so. Then add the lentils and stir in 3 tablespoons of dark Tahini and the juice of one smallish lemon plus a handful of coriander leaves =- leave to cook for 20 minutes or so adding enough water to keep the lentils from drying out as the Tahini will make the dish thicken. When ready pour a little olive oil on the lentils and sprinkle some more fresh coriander over the top plus some VERY thinly sliced raw onion- (and a sliced hard boiled egg if you are not totally vegan)
