Summer broccoli salad

This year I thought it was time to get serious about growing some veg. OK, there is alot more work to be done but I am amazed that I have succeeded in growing some broccoli and this has been my favorite way of eating it. This is a super delicious summer salad, hope you enjoy !.



250g broccoli florets
4 spring onions, finely sliced
125g fresh peas
2 avocados, chopped
1 handful coriander, finely chopped
1 large medium hot red chilli, finely diced
15g each of pumpkin, sesame and sunflower seeds, toasted
olive oil
juice of 1 juicey lime
salt and blackpepper

Blanch the broccoli in boiling water for 1 minute, refresh in cold water, then drain and dry on a tea towel or some kitchen roll. Remove as much water as possible, then place in a processor and blitz until finely chopped.
Place the broccoli in a bowl, along with the spring onions, peas, coriander, chilli and avocados. Drizzle over a tablespoon or two of olive oil, the lime juice and season. Mix well, taste and adjust the seasoning, add a little more lime juice if necessary and serve sprinkled with the toasted seeds.
