The noble Cauliflower

Give thought to this humble ugly sister of a vegetable. It is marvellously down to earth as it peers out of it green bonnet of leaves with its bumpy face. try this Italian take on the brassica with its bow to putenesca.

.Cut the cauliflower into small florets and steam till tender- add leaves at last minute then leave...then add chopped garlic, a finely chopped chili and anchovies (not if you're vegan!) cook a little till anchoives disintegrate...then add capers, olives and 6 ripe tomatoes peeeled and chopped...cook 15 mins, add florets with garlic etc and leave at least an hour, preferably a day, for flavours to be absorbed...reheat gently and serve with chopped parsley...enjoy

I bet that would be good cauliflower has always been a good substitute for potatoes
