Quails' eggs are considered a delicacy in many countries They are, unlike chickens' eggs, alkaline. Try them hard boiled with celery salt. You can also add them whole or halved with chopped anchovies to a mixed green salad dressed with good olive oil and a squeeze of fresh lemon.
