For those of you missing flesh, the aubergine (or eggplant) has been called 'the poor man's meat'...(Serves 2)

One large Aubergine cut in half lengthwise.

Score the flesh and gently pour good olive oil mixed with crushed garlic, lots of it, over the surfaces. When you have saturated both halves sprinkle on top some smoked paprika or mixed spices such as cassia, coriander, cardamom, nutmeg, ginger and cinnamon.

Place in hot oven gas mark 5 and bake until the flesh is soft and juicy with the garlic and oil.

Serve with brown rice and caramelized onions (saute onions gently in oil with some salt until dark brown).
