Down home black beans - fejao vegan style

add chopped onions, red peppers, tomatoes, parsley, chillies and garlic (lots of it). Simmer for a while until the ingredients are soft and have blended into each other and then add (depending on numbers) one or two tins of organic black beans with juice. Leave to simmer again until you have a good thick stew. Sprinkle with fresh coriander and eat. Goes well with brown rice and roast pumpkin. A side dish of fried plantains is also a treat.
