Are you stuck for new vegan/vegetarian sauce ideas??

Make a lot of this and keep it in the fridge. (Keeps for at least a week but obviously the fresher the better)You can use it as an additional flavour for any food ( except puddings unless you're Hesthen Blumenthal!)

Set oven to 150 and pile into a roasting pan cut up onions, ripe tomatoes, red peppers,garlic, black peppercorns, crushed coriander seeds. Roast until well cooked and vegetables are slightly charring. Put into a blender with a fresh red chili if you like things hot, with some walnuts, and whizz up with a dash of olive oil. That's it- add salt to taste (Himalayan salt preferably as it's very mild and also good...)
